Tips on how to make Tuscan Garlic Chicken:

This chicken is crunchy perfection, with a delicious gravy-like sauce to go on top. It is smothered in red bell pepper and spinach bits, that add the perfect flavor combo.

-The most critical step in making this chicken crispy, is placing it in heated olive oil, before placing it in the oven to cook.

If you don’t have olive oil, you could also use avocado oil or vegetable oil, but we prefer the taste of olive oil.

-The second step, is just letting the oil brown each side. You don’t want to cook the entire breast in the oil, you will want to bake it as well, to give it that extra oven baked crispiness.

-The sauce is a simple mixture of red pepper bits, garlic, cornstarch, chicken broth, heavy cream, milk, and spinach.

-When you are cooking the spinach, be sure to add it last, or later on in the recipe. Spinach shrinks and shrivels up quickly when heated, so be sure to watch it, and not overcook it.

Don’t be afraid to add large handfuls of spinach to the mixture either. They will shrivel up and shrink to about 1/4 of their size.

Would this recipe work with other noodles?

You could use any noodle for this recipe. I prefer the fettuccine noodles, but you could use macaroni, bowtie, spaghetti, rigatoni, etc. I also like to use wheat noodles for the health benefits.

Any noodles you have on hand will definitely work for this recipes.

TUSCAN GARLIC CHICKEN RECIPE

Delicious Tuscan style garlic chicken that tastes great with pasta! It is one of our favorite copycat recipes, from Olive Garden, that we can't live without.

Ingredients

  • 1 cup flour
  • teaspoon garlic salt
  • 1 teaspoon pepper
  • 1 teaspoon dried basil
  • ½ teaspoon oregano
  • ½ teaspoon italian seasoning
  • 4 boneless, skinless chicken breasts
  • 7 Tablespoons olive oil divided
  • 16 oz fettucine pasta
  • 1 Tablespoon minced garlic
  • 1 red bell pepper diced
  • Tablespoons corn starch divided
  • ½ cup chicken broth
  • ½ cup heavy cream
  • 6 oz spinach leaves
  • 1 cup milk
  • 1 cup grated parmesan cheese

Instructions

  • Preheat oven to 350. Combine the flour, garlic salt, pepper, basil, oregano, and Italian Seasoning.

  • Dip each chicken breast in the flour mixture and coat well.

  • In a large skillet, heat 5 Tablespoons oil until hot. Place the breaded chicken in the oil until each side is golden. Don't cook all the way through, it will finish cooking in the oven.

  • Line a cookie sheet with aluminum foil and spray with non stick cooking spray.

  • Place the chicken breasts on the cookie sheet and bake for about 15 minutes until cooked through. Set aside until ready to use.

  • While the chicken is baking, prepare the noodles as directed on package.

  • Wipe the skillet with some paper towels and add the remaining 2 tablespoons of olive oil.

  • Cook the garlic and diced red pepper for about 3 minutes. Stir in 1 tablespoon of corn starch and stir constantly for one minute.

  • Add the chicken broth and bring to a light simmer while whisking constantly until it is starting to thicken. This takes about 3-4 minutes.

  • In a separate small bowl, whisk together the heavy cream and the rest of the cornstarch. Add the spinach, and milk to the skillet. Bring this to a simmer and continue to cook until spinach starts to soften and go a dark green color. Stir in the cheese.

  • Top the noodles with the breaded chicken and spoon the sauce on top. Enjoy!
