With my fitness regimen in full swing, I’ve been pretty intentional about making healthy choices throughout the day. Since I’m pretty limited on time, thanks to my two demanding toddlers, my favorite healthy meals are the ones that only take a few minutes to prep but are full of flavor!

One of my favorite go-to meals lately has been this super quick and easy Lemon Basil Tuna BLT made with StarKist Selects E.V.O.O.® Yellowfin Tuna. As someone who has enjoyed her fair share of tuna, I was so excited to really be able to taste the difference since the StarKist Selects E.V.O.O.® Pouches are packaged in cold-pressed extra virgin olive oil.

So, without further ado, here’s how you can make this delicious spin on the classic BLT in less than 15 minutes with only a few ingredients.

What You Need:

-StarKist Selects E.V.O.O.® Yellowfin Tuna

-Lemons (or fresh lemon juice)

-Basil

-Mayo

-Salt

-Pepper

-Tomatoes

-Butter Lettuce

-Thick-Sliced Bacon

-Sliced Bread

Since the BLT is already such a fresh lunch option, aside from toasting the bread once you’re ready to build your sandwich, the only ingredient that needs to be cooked is the bacon.

An easy way to cut the prep time in half is to pre-cook your bacon. I like to cook a large batch of it in the oven and store it in the fridge during the week!

While the bacon is cooking, finely chop your basil and slice your tomatoes.

Next, add your StarKist Selects E.V.O.O.® Yellowfin Tuna to a bowl and add fresh lemon juice, fresh basil, mayo, salt, and pepper. The extra virgin olive oil in the StarKist Selects E.V.O.O.® gives the tuna a rich flavor and tender texture that makes the traditional BLT a lot more filling.

At this point, your bacon should be done and can be set aside on a paper-towel-lined plate to cool.

It’s almost time to build your Lemon Basil Tuna BLT, but first, we have to toast the bread. A toaster oven works fine for this, but I’ve found that using the oven’s broiler to toast the bread works great and is really quick!

Be sure to keep an eye your toast to ensure that it doesn’t burn!

Now that your bread is toasted, it’s time to build your Lemon Basil Tuna BLT!

To assemble your sandwich, spread a layer of mayo on each slice of bread. Next add the lettuce, sliced tomatoes, a few slices of bacon, a generous serving of the delicious lemon basil tuna mixture and top with the other slice of bread.

Ingredients

  • 2 Packages of StarKist Selects E.V.O.O.® Yellowfin Tuna
  • Half of A Freshly Squeezed Lemon (or 1tbsp of fresh lemon juice)
  • 1 tbsp Basil
  • 1 1/2 tbsp Mayo
  • 1 Tomato
  • A Head Of Butter Lettuce
  • 4 Slices Thick Sliced Bacon
  • Sliced Bread

Instructions

  1. Preheat oven to 350 degrees and cook bacon for 15-20mins or until crispy. Once done set aside on a paper-towel-lined plate and allow to cool.
  2. While bacon is cooking, finely chop basil and slice tomatoes and set aside.
  3. Add your StarKist Selects E.V.O.O.® Yellowfin Tuna to a bowl and add fresh lemon juice, basil, mayo, salt, and pepper. Mix well until combined.
  4. Toast bread, then add a layer of mayo to each slice.
  5. To assemble your sandwich, take one slice of bread and add lettuce, sliced tomatoes, a few slices of bacon, a generous serving of the delicious lemon basil tuna mixture and top with the other slice of bread.
