Cauliflower cheese stuffed peppers are a colourful and delicious low carb side dish. Or enjoy a couple with a side salad for a vegetarian lunch.

Roasted sweet red peppers make a perfect case for creamy cauliflower cheese. You could use yellow but I find the red sweeter, especially when roasted. A simple low carb & gluten free cheese sauce is slathered over cauliflower, which is then placed into a red pepper and baked.

Cauliflower cheese is one of my favourite low carb dishes and I like to play around with it to stop it becoming monotonous. Here, I have used it as a pepper filling for a great keto side dish. You can stuff and bake a pepper with cauliflower rice, so why not the cauliflower itself?!

Cauliflower Cheese Stuffed Peppers Tips

  • For the cheese sauce you can add other cheese for extra flavour. A strong Gouda, Parmesan or Fontina would be delicious.
  • Red or yellow peppers are best for this baked dish. Green peppers are not sweet enough and would be a bit bitter when roasted.
  • This dish could be made ahead by preparing the dish ready to bake, cover and keep in the fridge until you are ready to cook it. It reheats well, as testified by the Chief Taster who has the leftovers for his lunch the next day!
  • Try mashing the cauliflower cheese before spooning it into the peppers. That works just as well. (I found that out by accident when I overcooked my cauliflower!)
  • Instead of heavy cream, use sour cream for extra creamy cauliflower cheese.

Serving Suggestions

These stuffed cauliflower cheese peppers make a great lunch with a side of salad, but serve them with a main dish to pair well with their flavor such as a herb crusted rack of lamb or a roast chicken for a hearty meal.

I made this evening, turned out well
. Just a couple of things in the recipe: you say 1 cup of cheddar cheese then in the instructions you say add 100g to the sauce, that can be confusing for people who don't understand metric. Also the recipe calls for half a cup of heavy cream but it is not mentioned in the sauce making. I make lots of your recipes, keep up the great work!

Thanks. I've adjusted it accordingly. It was an old recipe I updated but left a few things in that should not be there! Glad you enjoyed the recipe.

FAQs

How do you keep stuffed peppers from getting soggy? ›

No Moisture In, No Moisture Out. Following the logic of precooking your peppers to safeguard against sogginess, you should also avoid watery ingredients in your stuffing. Let's say your filling calls for tomato sauce. Rather than spooning it directly into your hollowed peppers, reduce it on the stove until it's thick.

Why do my stuffed peppers fall apart? ›

The problem stems from the common practice of boiling the peppers to start. The goal is to tenderize them before they're stuffed and baked, but generally the poor fellas are over-boiled, which results in their tendency to fall apart and, as noted, be flavorless.

Why does my cauliflower cheese split? ›

Cook your cauliflower cheese at the right temperature, otherwise your cheese sauce can split. If your cheese sauce splits before that, it can be down to leaving it out too long, or you've boiled the sauce. If this happens, add a splash of milk or cream and whisk vigorously and it should come back to life.

What is the best way to Precook peppers for stuffed peppers? ›

Many recipes call for boiling the peppers first, but I prefer to roast them – more flavor and less cleanup! The best way is to slice the peppers in half from the stem end down through the base, remove all the seeds and membranes, and then roast the halves until they're tender-crisp.

Should you soften peppers before stuffing them? ›

Depending on your stuffing recipe, you don't need to pre-cook peppers at all. However if you feel you need to par-cook them first, I'd suggest blanching them in a pot of salted, boiling water, then shocking them in an ice water bath. This way they're partially cooked, but still perfectly cool to handle.

Do you have to boil peppers before stuffing them? ›

I definitely suggest par-cooking the bell peppers first, just a little bit before stuffing them. Not only does this help to soften the bell peppers, but it also cuts down on your cook time. As the bell peppers are cooking you can make the filling, shaving off about 20 minutes from your total cook time.

Why do my stuffed peppers taste bland? ›

The thing about most stuffed bell pepper recipes is 3that they call for salt in the filling, not for the peppers themselves. Without salt, the peppers are flabby and bland, merely a filling case. With a sprinkle of salt, they transform into a sweet and powerfully savory part of the dish.

Why are my stuffed peppers tough? ›

If the peppers aren't tender when the cheese is melted, and the filling is hot, simply tent the pan with foil and continue baking until they are. Cut the Pepper in Half from Stem to End. When making stuffed peppers in the oven, I find splitting them from top to bottom best.

How do you get stuffed peppers to stand up? ›

To easily stuff bell peppers and keep them upright during baking, arrange and then bake them in a Bundt, tube, angel food, or muffin pan (spray with nonstick spray first). The peppers stay upright, freeing your hands for assembly.

Why can't you reheat cauliflower cheese? ›

Can you reheat cauliflower cheese? Yes you can, and it will taste fine… But just be aware that it will dry out a little and the cauliflower will be a little bit softer… not a deal breaker, but definitely not as good as fresh! Simply place any leftover cauliflower in a lidded container and refrigerate.

What is wrong with my cauliflower? ›

Bitter tasting cauliflower can be caused by too much heat or sun. It can also taste bitter from a lack of moisture, uneven watering, waiting too long to harvest, or overcooking. If bitter cauliflower has been a problem, try growing purple varieties (they tend to be less bitter).

Why does cauliflower cheese go watery in the oven? ›

Cauliflower cheese can go watery if the cauliflower is overcooked. Overcooked cauliflower releases water, which will seep into the rest of the dish. So even if your sauce was thick when it went in the oven, if its in there too long, the water from the cauliflower will cause it to go watery.

How are you supposed to eat stuffed peppers? ›

Dig in with a fork or spoon, or carefully cut the whole thing into pieces—there's no wrong way to eat a stuffed pepper. And there's something so satisfying about tearing into that edible package. These bell peppers are packed full of cheese, rice, lots of smoky spices, and veggies.

What is the proper way to eat stuffed peppers? ›

Eating stuffed bell peppers can be a bit messy, especially if the filling is particularly juicy. To minimize mess, use a knife and fork to cut into the pepper and filling, then scoop up a bit of each with each bite. Alternatively, you can carefully pick up the pepper with your hands and take small, controlled bites.

How do you can peppers so they stay crunchy? ›

Pickles, including pickled peppers, can be made crisper by adding calcium chloride granules. Calcium chloride does not lower the acidity in the jar and is safer to use than lime. It is used in commercially canned pickles.

How do you keep bell peppers firm? ›

If not stored properly, the vegetable can easily lose its crunchy texture. "Humidity is the key here, as too much moisture can cause bell peppers to lose their crunch," Rotman says. She recommends you place bell peppers in a resealable bag and keep them in the front of the crisper drawer.

How do you firm up peppers? ›

Peppers are a tricky bunch, with their ability to bounce back depending on the type of pepper and the thickness of the skin. If they've lost their crispness and you want them for salads, you can slice them up and try a 10 minute ice bath in a bowl. You can also pickle the peppers, even in their limp state.
