I keep saying a new favorite soup, but this certainly became a new favorite the minute I tried it. All those summer BBQ tastes, the sauce, chicken, sweet corn, onions... all with a delicious complex broth. I served this night of Halloween. We sit at the bottom of our drive way along with a couple of other neighbors and make a small event of handing out candy. This soup kept the chill out. The little extra heat from Cajun SPices, BBQ sauce and a few drops of hot sauce kept us toasty warm inside.

If I were serving this inside I would have added a dollop of Sour Cream. Next time I may add a few more vegetables (Green Peppers, Celery). But as is, it was fantastic. Hearty warming and delicious. The BBQ sauce flavored broth was exactly what I wanted...

OK... Here's what I did...

BBQ Chicken Soup


Ingredients

  • 2 TBS Olive Oil
  • 1 Medium Onion, Diced
  • 3 Cloves Garlic, Minced
  • 1-1/2 Cups Chopped Carrots
  • 3 Cups Chicken Stock
  • 2 Cans Sweet Corn, drained
  • 3 TBS Worcestershire Sauce
  • Salt and Pepper to Taste
  • 1 Whole Rotisserie Chicken, deboned and diced
  • 1 Cup Your Favorite BBQ Sauce
  • 1 tsp Cajun Spice Mix
  • Several drops of Tabasco Sauce, to Taste
  • French Fried Onions as Garnish

Cooking Directions

  1. I a large ceramic lined Dutch Oven or large skillet, heat the Olive Oil over medium high heat.
  2. Add the Onions and Carrots to the oil and saute for about 5 minutes, until the onions become translucent.
  3. Add the Garlic and saute for one additional minute.
  4. Add the Chicken Stock, Worcestershire Sauce and Corn and stir to combine.
  5. Taste the broth and add Salt and Pepper to taste.
  6. While the pot simmers, debone the chicken and dice into bite size bits. Add the BBQ Sauce and gently stir to coat.
  7. Add to the soup, stir to mix and taste. Add the Cajun Spices and Hot sauce to taste. Continue to simmer for 20 minutes to allow the tastes to mingle and the broth to thicken slightly.
  8. Garnish with a small handful of French fried Onions, Serve HOT and ENJOY!
